Million Dollar Toast- Hip Eats Recipies

I know avocados have a reputation for being expensive and I may be a bit late to the whole trend but these days I have been lovin’ my homemade avocado toast and I want to share the recipe with you!

Here’s what you will need:

1 avocado

1/2 diced Roma tomato

pinch of salt

pinch of pepper

poached egg

butter (I use vegan butter)

toast  ( I used a sourdough rye toast From Walmart)

I simply chopped up tomato, and mash the avocado and then mixed together with salt and pepper. I then toast my bread in a pan with some butter and fry the toast on one side, once browned I spread on the avocado mix and then I add a hard poached egg on top and finish with a pepper on top!

I was surprised how easy this is to make at home! Avocado toast is great meal full of healthy fats from the avocado, antioxidants, and vitamins A, C,  folic acid from the tomato, healthy grains and fiber from the toast and if you’re looking for some more bonus benefits try adding some chia seed, flax seed or hemp seed on top!
